Pad Thai Pizza - four ways

Presenting the grand prize pizza from the great pizza cook of 2011.

(Inspired by CPK's Thai Chicken pizza)

Dough (inspired by Ruth's famous pizza dough):
2 cups of flour
1 package of yeast
1 teaspoon of salt
a scant cup of warm water

mix everything together, knead, cover, and let rise for at least an hour. refrigerate overnight (optional...this will make the dough more elastic).

Toppings:
peanut satay sauce
grated carrot
chopped green onion
mozzarella cheese
chopped peanuts
chopped cilantro
red pepper flakes (optional)
diced cooked chicken breast (optional)
diced boiled shrimp (optional)
diced sauteed beef (optional)
*if using meat, toss the cooked meat in a light coating of the peanut satay sauce.

Preheat the oven to 500. Spread the dough over a hot pizza stone. Parbake for about 10 minutes.
Remove the pizza from the oven, and let the dough cool slightly.
Spread peanut satay sauce over the dough. Sprinkle a light amount of cheese across the sauce
Evenly distribute the toppings on top of the cheese. *if making the pizza "four ways," divide the pizza into quadrants, and put each meat in one quadrant, leaving one as a veggie.
Sprinkle another light layer of cheese on the toppings.
Put back in the oven, and cook until cheese is starting to brown.
Remove from the oven, let cool slightly, and sprinkle chopped cilantro over the top.
Serve with Sriracha sauce for extra heat.
